How We Work
Before anything else, we get the concept locked. Not the logo — the idea. Who is this for, what does it feel like, and why will someone choose it over everything else on the street? If this isn't clear before you open, it won't become clear after.
We build the menu architecture around the numbers — food cost, labour, covers, average spend. Beautiful food that doesn't work commercially isn't a menu, it's a problem. We make sure both are solved at the same time.
SOPs, kitchen flow, service sequence, supplier relationships, ordering systems. None of this is glamorous. All of it is what keeps the place running when you're not standing in it.
We work with your team before the doors open. Standards, culture, tone — the things that can't be trained in a week. The team that opens is the team that sets the standard. Get that right and it compounds.
We stay through the soft opening. Real service, real feedback, real adjustments. Most consultants hand over a document and leave. We stay until the machine is running.
